KITCHEN MANAGER

Job Duties

  • Lead a small team in the kitchen including training, task assignment and follow up.

  • Develop a menu that fits the fast-casual brewpub concept. Expand or modify periodically.

  • Identify equipment and staffing requirements to execute menu.

  • Prepare and delegate preparation of food items selected for cooking in ovens, grills, fryers and a variety of kitchen equipment.

  • Oversees and delegates food prep assignments as needed.

  • Conduct inventories, purchasing, receiving, and storage and ordering of food and supplies to maintain sufficient food product levels.

  • Maintain sanitation procedures and organization of work area adhering to all DOH regulations.

  • Ensure that all operations, recipe, specifications books, and training materials are current and maintained.

  • Ensuring equipment and fixtures are in good repair, clean and maintained on a regular basis. Maintain appropriate cleaning schedules.

  • Train and coach team via established training manuals, management service standards, and overall use of best practices in the industry.

  • Work directly with the Executive Team and Taproom Manager to facilitate an excellent service focused business.

  • Create standards and controls to continually maintain high levels of service and profitability.

  • Create staffing schedules and set staffing levels while coordinating with taproom management to ensure high standards of customer service.

  • Address and properly manage any conflicts that may come about.

  • Ensure cash management procedures are completely accurate and secure

  • Any other assigned tasks.


Qualifications

  • Minimum 3 years experience in kitchen supervisory positions is required.

  • Minimum 1 year experience managing budgets and culinary cost controls.

  • Strong computer skills including Word, Excel, and Google docs/sheets.

  • Strong knowledge and attention to detail on kitchen operations including: team member training and supervision, inventory controls and and product quality.  

  • Ability to work efficiently and multi-task in a fast-paced environment.

  • Currently possess a DOH Certified Food Protection Manager (CFPM) Card

  • Excellent people management skills and ability to direct and lead a team.

  • Ability to troubleshoot problems as they occur, and conflict resolution skills.

  • Passion for craft beer with an experienced palate and sensory evaluation skills.

  • Strong leadership, communication, time management and organizational skills

  • Completion of the Certified Cicerone Beer Server exam within 60 days of employment.

  • Flexible schedule with availability on nights and weekends.

  • The ability to lift up to 50 lbs multiple times throughout a work shift.

  • Ability to work in a variety of temperature ranges, including cold temperatures in the cooler/freezer and warm temperatures in the kitchen area.

  • Ability to stand in one place for extended periods of time.

Preferred Qualifications

  • Bachelor’s degree preferred.

  • Knowledge in American Sign Language (ASL) is sought after.

Benefits

  • Salary position with 40-50 Hrs/week expected.

  • Competitive salary based on experience ($42,000 - $55,000)
